Starter Fountain Pen Recommendations?

I was thinking: maybe I should share the latest development in my fountain pen story here.
So you may remember that my two sons (8&9) were really interested in fountain pens from the start. They were the ones who convinced me I *needed* to buy that first Retro Pop in the store. They’ve watched the Goulet Fountain Pen 101 videos with me. They ask to use my fountain pens quite often. I usually tell them yes, but the rule is that they have to write nicely and neatly with them, no scribbly messy handwriting. They’ve tried all my pens. They both have favorites. To be honest, I think my oldest son has used my Al-star more than I have...I’m surprised there’s any ink left in it. My youngest son prefers the TWISBI’s and rotates between all of them depending on what color ink he wants to use.
A few weeks ago, my oldest son informed me he was saving up for his own Al-star. Cool. I’m glad he’s enjoying pens so much, right? Then a few days ago, my younger son asked me if he could save up and buy his own Eco. Sure! But then I started thinking...it would take them forever to save up enough money to buy either of those pens. Like 8 or 9 months. That’s a long time for a kid. So I sat them down and asked them if they would like me to buy them their own fountain pens for Christmas this year, for Christmas Eve (when we exchange our family gifts), instead of getting them a toy. Surprisingly, the answer was a resounding, “YES! YES!” (My babies are growing up!)
So I told them, I would let them pick out their own very first pen, and set them up on Amazon and told them they could chose any pen they wanted under $35. They were sooooo excited. They poured over pens, and each found one that was “perfect.” My oldest chose a gold (his favorite color) Lamy LX Live Deluxe (who knew such a thing existed? And for only $28), and my youngest was fluctuateing between two colors, but settled on the totally clear Eco. Afterwards he told me he might save up for (actually he said, “start collecting” - oh no! What have I started???) the other color Eco’s he liked.
Both of them can hardly wait for Christmas now. It’s really fun having someone to share this journey with. We are all having the best time with this. Best of all, an old friend of mine was cleaning out her calligraphy stash and sent us a surprise box of like 50+ samples of fountain pen ink (from Goulet), so the boys are already excitedly choosing the color for their first “fill.” (So many options!)
