Safe but perhaps not as exciting as some, I start letters with either Dear, Hi, Hello + name of recipient.
Endings, usually best wishes, but sometimes go silly with bestest wishes!

To men I always start with Hi or hello and name of recipient end with take care.
To women if I know them well its Dear and name of recipient and end with Hugs or love and kisses or take care depending on how well I know them. If I don't know them well then its Hi or Hello and name of recipient.
Not trying to be prejudice towards men but that is my comfort zone.

I almost always just start with "Dear [Name]". Very occasionally, when the mood strikes, and only with close friends, I start with "Dearest [Name]".
I think I usually close off with "Sincerely, Hilary". And maybe sometimes "Until next time, Hilary".

I almost always start with "Dear XXX," and then "Thank you for your letter of February 20th." I typically end with something like "Well, I'll end it here but hope you're doing well and to hear from you when you get a chance. Regards, thatauthor" Sometimes I also put the type of paper/ink/pen at the bottom of the page, especially if I know the correspondent is a fountain pen user. I might do it even if the person isn't a fountain pen user or if I'm writing in pencil.

On postcards I just write the name
