I can only freely use a notebook for unpretty notes when it's a refillable system and the refills I got for it are cheap. So stupid!

You know you're really in the deep end if you carry an empty fountain pen around. Maybe because, you just got it, like how it looks and fits in the pocket, but haven't picked an ink to initiate it with.
So, having done that, yeah, at this point I may have more blank notebooks than regular printed "book" books. I have filled 2 small moleskines and about half each of another small one, and one large. Those 4 moleskines are old enough that they were not made in China, and the little ones I had to order direct from modo y modo by pretending to be a retailer. And... I still have a full box (16 notebooks? 12?) that I haven't touched because it looks so nice as a full box of blankness.
The problem with this is that it does not reflect well on the ink collection. One, in theory, is going to use all the pens, all the inks, and at least frequently write in one notebook. Otherwise one might die with untried ink, uninked pens, and notebooks still with the shrinkwrap on.
And speaking of shrink, try explaining any of this to your therapist. No, dear, it is not OCD so stop trying to "fix" it. You can rearrange my unused bottles of ink all you like and I won't get anxious; rather, I'd be honored you noticed them.

I have been carrying around a pack of two pocket-sized Moleskine notebooks, still in their shrink wrap since the first weekend of December. They just sit there in my purse because I may have to write something down. But I have other cheap notebooks for list-making and the like. I am waiting for that perfect thing to write about/track in the Moleskine. I don't want to use them unless I have something profound to write about, so they sit empty. Also, I'm not sure that I've ever carried an empty pen around with me, but I always carry multiple pens with me (10+) because how am I supposed to know which pen/ink combo is going to speak to me when I get the urge to write? I need options. Lots of options.

Oddly, if we have enough in common, I don't think having "something profound to write about" is necessarily going to help. The moleskines I use have pretty much been diaries, therapeutic outpourings, and the occasional health or science experiment data or notes. By all means, break out a fresh notebook if you do find the perfect thing to write about, but at least in my case, I've given up on calling "waiting for the perfect thing" a reason for not sullying a notebook as thoroughly as I've given up "looking for the perfect pen" as a reason for buying more.
I like blank notebooks, and I like new pens. I also love the feeling of potential. The sheer variety of pen and ink I could bring to that special notebook should, one day, something really worth writing about should come around. Just having that possibility gives me a subtle, abiding joy, that I'm going to call worth the expense and the storage space even if it is irrational. When my level of enlightenment renders such external props unnecessary then I shall reconsider.

I am so glad to find other people like me. I used to think I was kinda weird about these things. When I was young I somehow got my hands on a Bic accountants pen. Loved that pen so much. Either it ran out of ink or I eventually lost it. My Mom did not understand the importance and I never got another. Not a traumatic teen event or anything, just showed me how others did not understand or feel similarly.

I have so many notebooks. Several have something written on the first page or two and then abandoned. I keep thinking I need to save the nice ones for something special. What's wrong with me?! Just use them.

I just retired a little Fabriano pocket notebook that has ridden in my back pocket for the past year. Well, the first page is marked 8May19... The paper is EcoQua with dots, and the back half of the notebook has perforations if you need to tear a page out and hand it to someone (I find that this is a thing that happens on occasion).
It is rather frayed, wrinkled, warped, and the top corners are cut off so I can quickly thumb to the current page. Every page has little ink blobs where I closed it too quickly after writing a quick note in it. But, it's still very much of a piece and the staples are holding up nicely. This poor little thing has literally been sat on every day for a year.
Its replacement is already starting to look a bit care worn... But, I have to give these little pocket notebooks a big thumbs-up for durability! They come in four packs and work out to a cost of maybe $3 each. I've already got my next set!

I need a small journal I can tear the pages out of.

And just like that (badda-bing) my four pack of pocket EcoQua notebooks arrived this evening. They are very pretty. Four colors (I did not specify or have a choice) that I like a lot: turquoise, purple, black and grey. SWEET. The first half of the pages are not perforated, but the second half are, and I think that is very interesting. Maybe the first half are your own notes, and perhaps the second half are notes you want to tear out and share? I'll have to think about that, but it seems to be suggesting a certain use. I like the size a lot. Adorable. I have begun with the purple one using Colorverse Opportunity in my rose Faber-Castell Essentio. Matchy-matchy. Thank you for the recommendation!
